Seasoned green beans may be covered and chilled up to 24 hours before baking. Slide them into the oven to bake about 15 minutes before the quail is done.
Makes 6 to 8 servings
1 pound haricots verts (tiny green beans), trimmed
1 tablespoon olive oil
1 tablespoon butter, melted
1 teaspoon kosher salt
1 teaspoon country-style Dijon mustard
Preheat oven to 400°. Toss together all ingredients. Spread in a single layer on a 15- x 10-inch jelly-roll pan. Bake 15 to 18 minutes or to desired degree of doneness, stirring twice.
