The oven temperature may seem too high, but don't fear: The wedges are thick enough that they will cook through without overbrowning.

How to Make It

Preheat oven to 450°F with a baking sheet in the oven. Combine potato wedges, 1 Tbsp. minced fresh oregano, olive oil, lemon rind, salt, and pepper in a bowl. Coat preheated pan with cooking spray. Add potato mixture to pan; bake at 450°F for 30 minutes, stirring after 15 minutes. Sprinkle with 1 tsp. minced fresh oregano, lemon juice, and crumbled feta.
