  • 2 large garlic bulbs
  • 1 1/4 teaspoons olive oil, divided
  • 1 teaspoon freshly ground pepper
  • 1/2 teaspoon kosher salt
  • 4 (4-oz.) beef tenderloin fillets
  • 1 teaspoon butter


  1. 1. Cut off pointed ends of garlic; place on a piece of aluminum foil, and drizzle cut sides with 1/4 tsp. olive oil. Fold foil to seal.
  2. 2. Bake at 400° for 40 minutes, and let stand 30 minutes. Squeeze pulp from cloves into a small bowl. Smash garlic, pressing with back of a spoon to make a paste.
  3. 3. Sprinkle pepper and salt evenly on beef fillets.
  4. 4. Melt butter with remaining 1 tsp. oil in an 8-inch nonstick skillet over medium heat. Add steaks; cook 4 to 5 minutes on each side or to desired degree of doneness. Top steaks evenly with garlic paste.
