Roasted Citrus-Herb Salmon

Make this Roasted Citrus-Herb Salmon for a healthy and flavorful fish dinner. Lemon and lime zest, garlic and fresh herbs make for a perfect rub.

Ingredients

1 tablespoon fresh parsley, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon garlic, minced
1 tablespoon olive oil
2 teaspoons lemon zest
2 teaspoons lime zest
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 2 to 3-lb. salmon fillet

Preparation

Combine all ingredients except salmon in a small bowl; set aside.

Arrange salmon on a parchment paper-lined baking sheet; spread herb mixture over salmon.

Bake, uncovered, at 400 degrees for 12 to 15 minutes, or until salmon flakes easily with a fork.
