Roasted Chicken Breasts and Butternut Squash with Herbed Wine Sauce

    Very good and easy to make. My husband raved about it and we'll definitely be having it again. I had intended to use herbs de provence, but didn't have any on hand, so I just used a peppercorn herb mix that I had, and it turned out fine. The squash turns out tender and delicious!

    This was excellent and so easy to make ! I made it with boneless breasts, and it came out just fine. Needs more sauce, though. Will definitely make again!

    My attempt at this did not turn out so well, but I suspect it's because I strayed away from the instructions by using boneless chicken breasts and added a pound of cubed Yukon gold potatoes to the squash. The chicken turned out dry, even though I removed it after 33 minutes and the potatoes cooked slower than the squash, resulting in overcooked squash and under cooked potatoes. It has potential, though!

    Just made this, halving the recipe. It's important to check the chicken breasts, since they do dry out if overcooked. I used a mix of thyme, oregano and basil. I was fresh out of white wine, so I used a little apple juice, and it was great. A quick and easy meal and a recipe which I will use again.
