Roasted Cauliflower with Pine Nuts

  • 8 cups cauliflower florets (1 large head)
  • 2 tablespoons olive oil
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons toasted pine nuts

How to Make It

  1. Preheat oven to 450°. Combine cauliflower, olive oil, lemon rind, salt, and pepper on a jelly-roll pan; toss to coat. Bake at 450° for 25 minutes or until browned, stirring once after 10 minutes. Sprinkle with pine nuts.
