Roasted Cauliflower Mashed Potatoes

Serves 6 (serving size: 2/3 cup)

Tired of plain mashed potatoes? Cauliflower, milk, and butter are added here to create a rich, creamy side. Serve with gravy and a succulent cut of roast beef.


  • 1 pound chopped peeled baking potato
  • 1 pound cauliflower florets
  • Cooking spray
  • 1/2 cup warm 2% milk
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

How to Make It

  1. Boil potato 15 minutes or until tender. Drain; mash. Coat cauliflower florets with cooking spray; roast at 400° for 15 minutes or until browned. Place cauliflower in a food processor; process until smooth. Fold cauliflower into potatoes. Add milk, butter, salt, and pepper; stir well.
