Roasted Beets And Sweet Potatoes

Ingredients

  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons balsamic vinegar
  • 1 1/4 pounds beets, peeled and cut into 1-inch cubes (about 3)
  • 1 large peeled sweet potato, cut into 1-inch cubes
  • Cooking spray

How to Make It

  1. Preheat oven to 425°.

  2. Combine first 3 ingredients in a large bowl. Add beets and sweet potato, stirring well.
