  • 2 pounds medium-size fresh asparagus spears, trimmed
  • Vegetable cooking spray
  • 1/2 cup pine nuts, toasted
  • 1 plum tomato, seeded and chopped


  1. Spray asparagus lightly with cooking spray, and arrange asparagus in an aluminum foil-lined pan.
  2. Bake at 425° for 7 minutes.
  3. Sprinkle asparagus with pine nuts and tomatoes.
