Ingredients
- 1/4 cup low-fat plain yogurt
- 1/4 cup light mayonnaise
- 1 1/2 tablespoons lemon juice
- Salt and pepper
- 1/2 cup (2 oz.) crumbled blue cheese
- 2 heads romaine lettuce, quartered lengthwise and cut crosswise into 1/2-inch strips (about 9 cups)
- 8 ounces thinly sliced roast beef, cut into small pieces
- 1 cup croutons
Preparation
- Whisk together yogurt, mayonnaise, lemon juice, salt, pepper and 2 Tbsp. water in a small bowl. Stir in blue cheese.
- Place romaine in large bowl and toss with dressing to coat. Add roast beef and croutons, and toss again. Serve immediately.
