Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 4 large red tomatoes (2 lbs. total), chopped
  • 1 teaspoon sugar
  • 1/4 teaspoon red chile flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh oregano leaves

Preparation

  1. Heat oil in a saucepan over medium heat. Add garlic and cook, stirring, until fragrant, about 1 minute. Stir in tomatoes, sugar, chile flakes, salt, and pepper. Bring mixture to a boil, then reduce heat to low and simmer, stirring often, until very thick, about 1 1/2 hours. Stir in oregano.
