- 5 slices bacon
- 1 large green pepper, seeded and chopped
- 1 medium onion, chopped
- 2 cups fresh corn cut from cob
- 2 large tomatoes, peeled and chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup (4 ounces) shredded Cheddar cheese

How to Make It
Cook bacon in a large skillet until crisp; remove bacon, reserving drippings in skillet. Drain bacon well on paper towels; crumble and set aside.
Sauté green pepper and onion in reserved bacon drippings until tender. Add corn, tomatoes, salt, and pepper; cook over medium heat, 10 minutes, stirring frequently. Add cheese, and stir until cheese melts.
Top toast points with vegetable mixture. Serve immediately.
