Yield 6 to 8 servings


  • 5 slices bacon
  • 1 large green pepper, seeded and chopped
  • 1 medium onion, chopped
  • 2 cups fresh corn cut from cob
  • 2 large tomatoes, peeled and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup (4 ounces) shredded Cheddar cheese
  • Toast points

How to Make It

  1. Cook bacon in a large skillet until crisp; remove bacon, reserving drippings in skillet. Drain bacon well on paper towels; crumble and set aside.

  2. Sauté green pepper and onion in reserved bacon drippings until tender. Add corn, tomatoes, salt, and pepper; cook over medium heat, 10 minutes, stirring frequently. Add cheese, and stir until cheese melts.

  3. Top toast points with vegetable mixture. Serve immediately.
