Family recipe for Swedish rice pudding. We always had as a side dish not dessert.

Ingredients

  • 5 tablespoon(s) Rice
  • 1 quart(s) Milk
  • 3 tablespoon(s) Butter
  • 3 Eggs Beaten
  • 3/4 cup(s) Sugar
  • 1/8 teaspoon(s) Salt
  • 1 teaspoon(s) Vanilla

Preparation

  1. Put rice, milk, and butter in double boiler for one hour. Do not cover. Stir often. Beat eggs, sugar, salt, and vanilla. Pour boiling mixture into egg mixture. Pour into casserole and bake at 325 in watered pan. Stir once in oven after 10 minutes. Sprinkle with cinnamon and continue baking for 50 more minutes. Do not cover.
