Rice Flour Sugar Cookies with Simple Icing
This recipe is really quick and easy and super delicious. I cut them in star shapes for Christmas. It's perfect for people who avoid wheat and gluten. The recipe calls for rice flour but maybe you can try using other types, e.g. almond flour. You can also make the icing in different colours and have fun decorating colourful shapes.

Ingredients
- 3 cup(s) rice flour
- 1/2 teaspoon(s) baking soda
- 1/4 teaspoon(s) salt
- 1/2 teaspoon(s) baking powder
- 1 cup(s) butter
- 2 eggs beaten
- 1 cup(s) sugar
Preparation
- --> Cookies:
- Mix all ingredients to form dough. I use my hands to knead everything together. Roll it out and cut out as desired. Bake at 350F for 8-10 minutes. Leave to cool before decorating.
- Decorate with...
- --> Icing:
- 1 cup powdered sugar
- 1 1/2 tablespoons milk
- 1 teaspoon vanilla
- Combine all ingredients. Stir until smooth. You can add colour and make nice holiday treats. Decorate when cookies are cooled down.
