Rhubarb Spritzers

Ingredients

  • 1 quart water
  • 1/2 cup sugar
  • 4 stalks rhubarb (1 lb.), quartered crosswise
  • Ice cubes
  • Cold seltzer, for serving

Preparation

Combine water and sugar in a large saucepan and bring to a boil. Add rhubarb and simmer for 1 hour. Strain, discarding rhubarb; let cool.

Fill tall glasses with ice. Pour rhubarb "tea" two-thirds full; top off with cold seltzer.
