Rhubarb Liqueur

    Made correctly, this is a wonderful summer flavored concoction! I don't bother with the simple syrup and I usually make this in large quantities. Use rhubarb that I have cut up and frozen as it comes in (and out..esp price ways!) of season, add Triple Sec to taste and usually use Kettle brand vodka. After the color has leached out and the rhubarb strained, we make vodka tonics with it: one part vodka, one part lime juice, splash of pom concentrate over ice, then add tonic water. Very refreshing! It is surprising how well the rhubarb flavor comes thru, but you do have to let it sit quite a while to get that to happen.

    I love rhubarb and was so excited about this, but it just tasted like bad vodka to me. Luckily I discovered a "rhubarb tea liqueur" at the store soon after (by the same folks who make Root and Snap, the root beer and gingersnap liqueurs - YUM!).

    You must not have made it right Sukeedog. I made this last spring it was amazing. Great Rhubarb flavor and color. I didn't use cheap rotgut vodka but then I didn't pay for premium stuff either. Had that sweet/tart flavor you will know is Rhubarb as soon as you drink it. I put it with soda that was my favorite way.
