Ingredients
- 4 c. sliced rhubarb, fresh or frozen
- 2/3 c. sugar
- 2 T. flour
- 1 egg, slightly beaten
- 1/4 c. whole wheat flour
- 3/4 c. rolled oats
- 1/3 c. packed brown sugar
- 1/2 t. cinnamon
- 1/4 t. nutmeg
- 1/4 c. butter or margarine
Preparation
- Combine rhubarb, sugar, 2 T. flour and egg in a 8" round glass baking dish; Mix until evenly combined. Combine whole wheat flour, oats, brown sugar, and spices. Cut in butter until crumbly. Sprinkle over rhubarb. Microwave on High, uncovered, 12 to 14 minutes or until rhubarb is tender. Serve with vanilla frozen yogurt. Makes 6 - 8 servings. (This is on old recipe from the Denver Post - you may have to adjust times for newer microwaves. Also, make sure your dish is at least 1 "higher than the ingredients, as it bubbles up as it cooks.)
