Rhubarb Cake

Rhubarb Cake

Ingredients

  • 2 cup(s) all-purpose flour
  • 1/2 cup(s) sugar
  • 1/2 teaspoon(s) salt
  • 3 teaspoon(s) baking powder
  • 2 tablespoon(s) margarine
  • 1 egg
  • 1 cup(s) milk
  • 4 cup(s) rhubarb chopped
  • 1 3 oz package strawberry gelatin

Preparation

TOPPING: 1 1/4 c sugar

1/3 c flour

1/4 t nutmeg

1/2 t cinnamon

6 T butter, melted

1 c chopped pecans

Preheat oven to 350 degrees. Combine flour, sugar, salt and baking powder. Cut in margarine until crumbly. Add egg and milk and mix well. Pour batter into a greased 9 x 13-inch baking dish. Spoon rhumbarb evenly over the batter and sprinkle with dry gelatin and topping mixture. Bake 45 minutes or until lightly borwned and bubbly.
