  • 2 pounds ground beef
  • 2 cups soft rye breadcrumbs
  • 1 (10-ounce) can shredded sauerkraut, drained
  • 1/2 cup chopped onion
  • 1/4 cup whole milk
  • 1/4 cup commercial Thousand Island salad dressing
  • 1 teaspoon caraway seeds
  • 1 teaspoon dry mustard
  • 2 eggs, beaten
  • 5 slices bacon
  • 1/2 cup (2 ounces) shredded Swiss cheese


  1. Combine first 9 ingredients in a medium bowl; stir well. Shape mixture into a 9- x 5-inch loaf; place on a rack in a lightly greased roasting pan. Arrange bacon slices over loaf. Bake at 350° for 1 hour and 30 minutes. Sprinkle cheese over meat loaf, and bake an additional 5 minutes. Let stand 10 minutes before serving.
