All that food coloring gave the cheesecake an "off" taste, and the cream cheese frosting on top just seemed ... silly. The idea of a red velvet cheesecake is very intriguing ... the execution left a lot to be desired.

This was my first attempt at baking a cheesecake. I used reduced fat cream cheese, sour cream and buttermilk. Except for those changes, I followed the recipe exactly. It turned out beautiful and tastes great. I can't wait to share this with my family on Thanksgiving!

This is a GREAT dessert! This is the second time I've made this and everyone loves the taste and presentation. The only reason I wouldn't give this 5 stars is because the cooking time seems very off. Both times I've made this (in 2 different ovens) I've had to cook an extra 45 to 55 minutes. Other than that, this is wonderful! I will definitely make this again and again

I was very disappointed with this recipe. There was way too much red food coloring, and I believe that it gave the cake a bitter taste. Also, the cream cheese topping is not a good combination with cheesecake. A sour cream topping would have been better.

I made this cheesecake for a Valentines Day dinner party and my guests went wild. I would make it again. I did change it up a bit, instead of using more cream cheese for the topping which I though was overkill, I used 1 cup of sour cream a teaspoon of vanilla and a cup of powder sugar. It was perfect.

I thought this was a wonderful cheesecake, I plan to make several more for parties and such that I am attending in the next few weeks. It is quite the hit. I used 1 1/2 bottles of red food coloring instead of the full 2 because of a previous complaint, I thought it was perfect this way.

i love cheesecake and red velvet cake, so i thought this would be a great suprise for my boyfriend on valentines day. the prep was like 30 minutes, cook time was a little longer and chill time was over night, the food coloring didn't give it a bad taste, but it was a bit off. The frosting was really sweet but the cheesecake alone wasnt good without it, but im not sure what the problem was. my boyfriend ad seconds so he obviously didnt find anything wrong with it. i Used oreo crust instead.

I made this and a Caramel Praline Cheesecake for a work function. Only used one bottle of red food coloring which was perfect did not want to use any more!! I loved using the chocolate graham crackers for the crust as well, not too sweet. All I had was a 9½â spring form pan but the amount of filling filled the pan full. Everyone at work said it was outstanding and it was the first one eaten up. I WILL make it again.

FABulous!!!I made this for a second wedding cake for the bride! She loved it!!! I only used one (1 oz) bottle of red food coloring and felt it was red enough. I was afraid of using 2 bottles and making it look to "bloody". I will be making this alot more!!!

I disagree with the food coloring comments. I only used one bottle after reading past comments saying it was more than enough but i found it made the cheesecake more dark pink. It was delicious however next time i will try a bottle and a half.

I guess different people have different taste buds, my husband and I took one bite and looked at each other in a state of shock, and said OMG! I'm making another now. I normally make red velvet cake, but since everyone is making it now, I will never make another one. The Red Velvet Cheesecake is the TOPS!

Wow, this was amazing! This was the first time I ever made a cheesecake from scratch. It turned out perfect. I was so surprised how it even tasted like red velvet. And yes the frosting is important and NOT silly!!! Its a part of the Red Velvet and gives the cheesecake a finished look. I took this to a birthday party for co-workers who love red velvet and cheesecake.... and this was a hit. I will make this again!

Made it for a holiday gathering. The frosting would not solidify, the red velvet layer is bitter and the overall taste is bad. It was the worst cake or worst cheesecake I have eaten and am embarrassed I served it. Guests were nice enough to say they liked it but it was so bad I threw away the rest of it, regardless of how much it cost to make, it is not worth eating. Now I am more than hesitant to prepare a recipe from SL or myrecipes again because of this one. No I would not recommend it. You're better off buying a cheap cheesecake from the store.

I used 2 bottles McCormic food coloring (red dye); no flavor contribution at all. The natural dyes are usually concentrated beet which can taste 'earthy' when concentrated. I've made many cheesecakes and this is a fine recipe. Not the best flavored one, but the one that gets the most compliments in December. I double the recipe (4 bottles) and put it in two glass square 9" pans, then cut into squares and take to potlucks. Don't be afraid to try this recipe, it's fine.

I made this for Christmas and thought it was absolutely wonderful! I love anything red velvet, so this filled the bill! The only complaint I had, which one other reviewer had too, was I had to bake it 55 minutes longer. Still had like a round circle of wet in the middle and it jiggled after the 1 hr 15 min. I kept adding 10 min. to the timer and checking and it took all of 55 min extra. I had an oven thermometer in the oven the whole time, so the temp. was fine. The cheesecake came out perfect, not overdone. I don't know if anyone else had this problem. I've made cheescakes before and never ran into this.

This was great - I'm not sure what others did differently than I did that lead to a poor outcome. I followed the recipe except I only used 1.5 bottles of food dye and this cheesecake tasted and looked awesome. My family loved it. So pretty for Christmas Day.

I followed the directions exactly except I cooked 15 minutes longer. It was VERY good. I used 2 bottles of food coloring and the topping for cake was perfect. I made this along with my famous red velvet cake and my husband kept eating this until it was all gone. I had to pass out the recipe to all my friends. I will say chocolate graham crackers are hard to find except around Christmas time. My friend had to use oreos but advised to take the center cream out before using. I made this twice already and will be making it again for valentines day!

This cheesecake definitely makes my "Best Things I Ever Ate" list. I have made this cheesecake twice now and it has turned out perfect both times. The only thing I altered in the recipe was to use plain graham crackers instead of chocolate graham crackers since I had plain graham crackers on hand. The balance of not-so-sweet cheesecake and the sweet icing is perfect. Yes, it can be pricey to make, but it is very much worth it. When I told my mother I was making it for her Christmas dinner, she told me, "Bring the cheesecake but bring it in the back door and maybe I won't have to share it." Definitely a 5-star recipe and certainly pretty enough for special occasions.

My family loved it! My father who refuses to eat cheesecake ate two pieces of this one. It is a beautiful dessert to serve especially for a Christmas meal. Chocolate grahams are hard to find so I used chocolate Teddy grahams and they were fine. I did have to bake it 15 minutes longer but it may have been my oven. Would not hesitate to make this again though, thanks Southern Living!

I make and sell many different flavors of cheesecake. This one is one of my favorites. I have made minor changes; I don't use as much dye, I bake 15 min longer and I use a chocolate crust that I prebake. It is amazing.

I just made this for my mom for Mother's Day and it turned out great. I even tasted a little of the filling and it was really tasty! I didn't have to alter anything. The food coloring didn't make a difference in the taste at all. The cream cheese topping is good on top and not unnecessary like some think. I couldn't find any chocolate graham cracker crumbs, so I just added cocoa powder to the crumbs to make it chocolate. It's gorgeous!!! She's going to love it!!
