Preheat oven to 350. Cream sugar and oil; add eggs. Beat well. Sift together flour, salt and soda; set aside. Mix together food coloring, vinegar and cocoa; add to sugar and oil ingredients. Add vanilla flavoring. Add flour mixture alternately with buttermilk; blend well. Pour batter into 3 round cake pans or 1 sheet cake pan. Bake for about 35 minutes. Let layers cool thoroughly after baking.
Mix butter, sugar and cream cheese; add vanilla flavoring and nuts. Ice cake.
