Red Gravy Sauce

Yield about 4 1/2 cups

Ingredients

  • 1 cup chopped green pepper
  • 1 cup chopped onion
  • 1/2 cup chopped green onion
  • 3 cloves garlic, minced
  • 1/3 cup vegetable oil
  • 1 (10 3/4-ounce) can tomato puree
  • 1 cup sliced fresh mushrooms
  • 1 bay leaf
  • 1 cup sherry
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

How to Make It

  1. Sauté green pepper, onion, and garlic in oil in a medium saucepan until tender. Add tomato puree, mushrooms, and bay leaf; simmer 25 minutes. Stir in sherry, salt, and pepper; continue cooking 5 minutes. Remove bay leaf.
