Yield Makes 1 1/4 cups

  • 1 red bell pepper
  • 1/2 cup mayonnaise
  • 2 teaspoons sherry
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon hot sauce

How to Make It

  1. Place bell pepper on an aluminum foil-lined baking sheet.

  2. Bake at 450° for 15 minutes or until pepper is blistered, turning once.

  3. Place pepper in a heavy-duty zip-top plastic bag; seal and let stand 10 minutes to loosen skin. Peel pepper; discard seeds.

  4. Process pepper and 1/4 cup mayonnaise in a food processor until smooth. Stir in remaining 1/4 cup mayonnaise, sherry, and remaining ingredients. Chill.
