Ingredients

  • 1/2 pound smoked sausage, sliced
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1 (13 3/4-ounce) can chicken broth
  • 1 (15 1/2-ounce) can kidney beans, drained
  • 1/4 teaspoon dried thyme
  • 1/8 to 1/4 teaspoon ground red pepper
  • 2 cups uncooked quick-cooking rice

Preparation

  1. Cook first 4 ingredients in a nonstick skillet over medium heat, stirring often, until sausage browns. Add broth and next 3 ingredients. Bring to a boil. Stir in rice. Cover, remove from heat, and let stand 5 minutes.
