Red Beans

Yield 10 servings


  • 1 1/2 pounds dried pinto beans
  • 1/4 pound salt pork
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon chili powder

How to Make It

  1. Sort and wash beans; place in a large Dutch oven. Add salt pork, onion, and garlic. Add water to cover 3 inches above beans; stir well.

  2. Bring to a boil. Reduce heat; cover and simmer 3 hours, stirring occasionally. Uncover and continue cooking an additional 30 minutes. Stir in salt and chili powder.
