- 1 1/2 pounds dried pinto beans
- 1/4 pound salt pork
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 1/2 teaspoons salt
- 3/4 teaspoon chili powder
How to Make It
Sort and wash beans; place in a large Dutch oven. Add salt pork, onion, and garlic. Add water to cover 3 inches above beans; stir well.
Bring to a boil. Reduce heat; cover and simmer 3 hours, stirring occasionally. Uncover and continue cooking an additional 30 minutes. Stir in salt and chili powder.
