There is a grainy quality to ricotta that I just wasn't big on in this preparation. Flavors were great. And I love the idea of using up some left over ricotta for breakfast in this very quick and easy recipe. But to me it is just ok.
Pretty tasty for a 3-minute meal! And of course you can use any type of preserves you want - we tried both apricot and cherry. Definitely adding this to the "what can I make for dinner in under 10 minutes" file (yes, we had this for dinner).
