Ingredients

  • 4 cups thinly sliced napa cabbage (Chinese cabbage)
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped yellow bell pepper
  • 1/4 cup unsalted cashews, toasted
  • 1/4 cup red wine vinegar
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Preparation

  1. Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes.
