Ramen Noodle Salad
This easy salad recipe is a crunchy update to a classic broccoli salad. The Sweet-and-Sour Dressing adds a hint of Asian flavor.
Yield: Makes 8 t 10 servings
Ingredients
- 1 (3-ounce) package ramen noodle soup mix
- 1/4 cup butter or margarine
- 1 cup walnuts or pecans, chopped
- 1 (16-ounce) package fresh broccoli florets
- 1 head romaine lettuce, torn
- 4 green onions, chopped
- Sweet-and-Sour Dressing
Preparation
- Remove seasoning packet from ramen noodles, and reserve for another use. Break noodles into pieces.
- Melt butter in a large skillet over medium-high heat; add ramen noodles and walnuts, and sauté until lightly browned. Drain on paper towels.
- Toss together noodle mixture, broccoli, lettuce, and green onions in a large bowl; add 1/4 cup Sweet-and-Sour Dressing, tossing to coat. Serve with remaining dressing.
