Radish and Avocado Quinoa Salad

Serves 2 (serving size: 1 cup)


  • 1/2 cup water
  • 1/3 cup rinsed and drained quinoa
  • 1/2 cup diced avocado
  • 1/3 cup thinly sliced radishes
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 teaspoons olive oil
  • 2 teaspoons lemon juice
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon kosher salt
  • Dash of freshly ground black pepper

How to Make It

  1. Bring water and quinoa to a boil in a small saucepan. Cover, reduce heat, and simmer 13 minutes or until liquid is absorbed; let stand 5 minutes. Stir in avocado, radishes, parsley, olive oil, lemon juice, minced garlic, and salt. Sprinkle with a dash of freshly ground black pepper.
