Leslie Needleman, co-owner of The Gem in Dallas, came up with this recipe to help give her extra energy and vitamins during a round of chemotherapy.
about 2 1/2 cups
1 piece (1-inch; about 1/2 ounce) fresh ginger
1 (about 4 ounces) lemon, peeled, pith removed and halved
5 (about 4 ounces) Tuscan kale leaves
1 (about 8 ounces) Gala apple, halved, cored and cut into wedges
1 (small; about 8 ounces) red beet, scrubbed and cut into wedges
1 (large; about 12 ounces) cucumber, cut into 3-inch pieces
In an electric juicer, juice all of the ingredients. Serve right away.
