Rachel's Farro Salad

    Worthy of a Special Occasion

    I thought this salad was very good, refreshing and hearty at the same time. My farro seemed a bit undercooked. Will increase cooking time next time. My 7 and 11 year old boys liked it too, although one did pick the tomatoes out.

    everything came together so easily, but the taste was just average. it gave me a chance to use items i had growing in the garden, so with that in mind, i will keep this recipe and make again.

    Everyone in my family loved this. I think I will cut the cucumber a bit chunkier next time, just to hold up better with the farro. I used a pomegranate infused red wine vinegar, because that's what I had on hand.
