Soak quinoa in cold water for 1/2 hour. Rub grains between your hands. Rinse thoroughly. Strain. On medium heat toast the pine nuts until golden. Remove to a dish. Heat the quinoa until dry, turning color and starting to pop. Add the dried cranberries and other ingredients. Simmer covered over medium heat for 20 minutes. Remove from heat and let sit for five minutes. Ad the pine nuts and toss.
