Very easy to make, very healthy, very delicious. I've made this several times, and always get rave reviews.

This is a great version of tabbouleh because it tastes delicious and is so healthy. I added 1/4 C green onions, the zest from 1/2 a lemon, and some crumbled feta to it for some extra pizazz. Yummy, easy to make, and lasts for a few meals!

This makes a good dinner, or lunch, and could be a good potluck dish. I changed the cucumber to zucchini since that is what I happened to have, and added black olives. Delicious!
