This is one recipe that I keep coming back to. It is so easy to make and using fresh peaches with the quinoa is unusual but delicious! Everyone who I've made this for has liked it.

Ingredients
- 1 1/2 cups water
- 3/4 cup uncooked quinoa
- 1/4 cup minced red bell pepper
- 1/4 cup chopped green onions
- 3 tablespoons fresh lemon juice
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons honey
- 1/4 teaspoon black pepper
- 1 ripe peach, pitted and thinly sliced
Preparation
- 1. Bring 1 1/2 cups water to a boil in a medium saucepan. Add quinoa to pan; cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly. Stir in bell pepper and remaining ingredients.
