Quinoa Salad with Peaches

    This was an instant hit with us! I made no changes to the recipe (unless using red quinoa counts as a change), and I served it with Spicy Honey-Brushed Chicken Thighs. The two recipes work very well together.

    Worthy of a Special Occasion

    I served this with the Spicy Honey-Brushed Chicken Thighs as recommended in the September magazine and was very pleased with the pairing. The combination of sweet and savory with the peach, honey and bell pepper took a few bites to grow on me, but now I'm looking forward to making it again. :)
