Quinoa Salad with Peaches

Serve with Spicy Honey-Brushed Chicken Thighs

Ingredients

  • 1 1/2 cups water
  • 3/4 cup uncooked quinoa
  • 1/4 cup minced red bell pepper
  • 1/4 cup chopped green onions
  • 3 tbsp fresh lemon juice
  • 1 1/2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1 1/2 tsp honey
  • 1/4 tsp black pepper
  • 1 sliced ripe peach

Preparation

Bring water to a boil in a medium saucepan; add uncooked quinoa. Cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly.

Stir in peppers, onions, lemon juice, olive oil, salt, honey, pepper and peach.
