This was an instant hit with us! I made no changes to the recipe (unless using red quinoa counts as a change), and I served it with Spicy Honey-Brushed Chicken Thighs. The two recipes work very well together.

- 1 1/2 cups water
- 3/4 cup uncooked quinoa
- 1/4 cup minced red bell pepper
- 1/4 cup chopped green onions
- 3 tbsp fresh lemon juice
- 1 1/2 tbsp olive oil
- 1/2 tsp kosher salt
- 1 1/2 tsp honey
- 1/4 tsp black pepper
- 1 sliced ripe peach
- Bring water to a boil in a medium saucepan; add uncooked quinoa. Cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly.
- Stir in peppers, onions, lemon juice, olive oil, salt, honey, pepper and peach.
