Quinoa Salad with Chicken, Avocado, and Oranges

    We made a vegetarian version of this, substituting navy beans for the chicken. It was divine. Using navy beans instead of chicken also made it super easy, whittling the ingredient list down to just six ingredients. This is one of the best meals we've made recently, and we make a lot of good meals at our house!

    Another Sunset winner! I served this on a bed of spinach with a sprinkle of cayenne pepper. Tastes too good to be this easy.

    Perfect blend of citrus and savory flavors. The broiler did wonders for juicy and tender chicken. I couldn't be happier. This was a filling meal, easy to make, and a punch of deliciousness in your mouth. Way to go sunset. This one is a winner.

    AHHHmazing - and healthy! I did not deviate at all from this recipe so I have no suggestions on making it better. I'm sure the left overs will be even better once everything has marinated together overnight. I'm hoping the lime juice/oranges will keep the avocados from turning brown.

    so fresh and easy. all the flavors matched perfectly, a delight to eat. i made with grapefruit as well which i liked even better than the oranges and lime, doesn't really need the chicken for a more vegetarian approach

    Very good. The chicken was very tasty. Segmenting the oranges took some time. I added the excess juice from the orange segments to the salad.

    This dish is delicious. I used chicken breasts instead of chicken thighs as I prefer white meat, I did not make any other changes to the recipe. I made it last night, and the avocadoes did not turn brown. It's healthy, satisfying, and I will be making it often. It's also a great starter dish to serve guests at a dinner party or as a main course for a family of health-conscious picky eaters like mine!

    wow this was incredible!! I know it would be delicious just as the recipe is but I had to tweak it because I didn't have all of the ingredients. First off, I halved the recipe. For the chicken I used one chicken breast, cut up and cooked with the spices in a skillet until done. I used 3/4 cup quinoa and just 1 orange. This is one of the best dishes I have ever made!

    We were wanting to try to integrate quinoa into our diet and thought this recipe sounded interesting. To be honest, neither of us expected to like it as much as we did. It was really fresh, perfect mix of flavors. A full summer meal in one dish! We only used 2 oranges, which were large and that was definitely enough. I think clementines or tangerines, being much smaller pieces, would have been better.

    First time using quinoa-it was delicious in this recipe! I didn't use the full amount of quinoa though-just about a cup, and squeezed some of the oranges juice into it. Definitely think next time either halving the oranges or using clementines would be better. Can't wait to make it again!

    I use Mandarin oranges, and squeeze lime and Mandarin juice in top at the very end; toss. So delightful. Blood oranges for extra color can also be used. Best quinoa recipe ever in my opinion.
