Quinoa, Corn, and Mint Salad

    This is a great way to cook quinoa! It has a very light, fresh taste. I used the other reviewer's suggestion and served it with a steak and some avocado on the side. It was perfect!

    My daughter in law made this for us Sunday, and it was absolutely delicious. So naturally, I had to get the recipe. Not knowing what quinoa is, it never would have been something to try. We are glad she did, and thanks Ashley, this was delicious. She served grilled steak, and an avocado salad. So, so good.

    I've been looking for ways to make quinoa since it's so good for you and this recipe is excellent. The mint, onions and lemon are not overpowering and the combination is really fresh tasting. This would be a great summer dish. I served it with teriyaki grilled chicken but would serve it with about any grilled meat or fish.

    Based on the reviews and rating I had high expectations for this, but when I made it I didn't fall in love. I really like quinoa and am willing to try it again, perhaps my cooking game was off that night!

    This salad is perfect for those warm summer months! Tastes is fresh and light, and a perfect accompaniment to grilled whatever! I used fresh basil instead of the mint for a more savory flavor, This recipe is easy to make, and tastes even better the next day.

    Very easy to make and with some minor adjustments it'd probably be really good. I thought there was WAY too much lemon in this. Once I balanced that out, I thought it was good. I'd make it again and cut the lemon zest amount in half.

    Love love love this recipe!! I substituted chives for the green onions because that is what I had, but I think it gave a more mild onion taste and I prefer that. I will be making this all summer!

    Everyone at a dinner party loved it! I actually used frozen corn to make it easier. Fresh corn would have been better but it was still excellent. I didn't use a full cup of green onions.

    Really lovely and light. I added fresh chopped red pepper for color. Used very little oil and the juice and zest from half a lemon. A fresh healthy and easy side. Defenitly will be keeping this one. Would be a hit at any pot luck. Delisth!!!
