Quick Salsa

"The best thing about this salsa is that everything can be thrown into the blender with very little chopping - you can even leave some stems on the cilantro. Ingredients

  • 3/4 cup chopped red onion
  • 1/2 cup minced fresh cilantro
  • 1 (10-ounce) can diced tomatoes and green chiles, undrained (such as Rotel)
  • 1 (10-ounce) can diced tomatoes with lime juice and cilantro, undrained (such as Rotel)
  • 1 garlic clove

Preparation

  1. Place all the ingredients in a blender, and process until smooth. Serve the salsa with low-fat tortilla chips.
