3/4 cup chopped red onion
1/2 cup minced fresh cilantro
1 (10-ounce) can diced tomatoes and green chiles, undrained (such as Rotel)
1 (10-ounce) can diced tomatoes with lime juice and cilantro, undrained (such as Rotel)
1 garlic clove
How to Make It
Place all the ingredients in a blender, and process until smooth. Serve the salsa with low-fat tortilla chips.
I made this recipe exactly as written. I, however, thought it could even be better. I added the juice of 1/2 lime and voila... perfect. Just the right amount of tang and the juice makes it so fresh tasting. Next time I might add the juice of 1 whole lime just to see. Having said all of this, the recipe is great and... ah.. so easy and fast. Never again will you want another pre-bottled tasteless salsa.
