  • 1 pound yellow squash
  • 1 tablespoon fresh dill weed
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon dried crushed red pepper


  1. Cut squash lengthwise into eighths. Stir together dill weed, mint, vinegar, lime juice, salt, black pepper, and dried crushed red pepper in a large bowl. Add squash, tossing to coat. Cover and chill 1 hour.
