1 pound yellow squash
1 tablespoon fresh dill weed
1 tablespoon chopped fresh mint
2 tablespoons apple cider vinegar
1 tablespoon lime juice
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried crushed red pepper
How to Make It
Cut squash lengthwise into eighths. Stir together dill weed, mint, vinegar, lime juice, salt, black pepper, and dried crushed red pepper in a large bowl. Add squash, tossing to coat. Cover and chill 1 hour.
