Quick-Pickled Cukes

This easy Quick-Pickled Cukes are soaked with flavor.

This recipe goes with Flank Steak and Cucumber Salad

Ingredients

  • 4 cups thinly sliced English cucumbers (about 2 large)
  • 1/2 cup sliced green onions
  • 1/2 cup rice vinegar
  • 3 tablespoons sugar
  • 1 garlic clove, minced
  • 1 teaspoon kosher salt

Preparation

Place cucumbers and onions in a large bowl. Bring vinegar and next 3 ingredients to a boil in a saucepan, stirring until sugar dissolves. Pour over cucumber mixture. Let stand 30 minutes. Serve with a slotted spoon.
