Quick Pasta Skillet

Yield 4 servings (serving size: 1 1/2 cups)

Ingredients

  • Cooking spray
  • 1 teaspoon olive oil
  • 1 (8-ounce) package pre-sliced mushrooms
  • 1 cup chopped yellow onion
  • 3/4 cup chopped green bell pepper
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon salt
  • 2 garlic cloves, minced
  • 1 (14-ounce) jar pizza sauce
  • 4 cups hot cooked penne (about 2 cups uncooked tube-shaped pasta)
  • 1 1/2 cups (6 ounces) shredded part-skim mozzarella cheese

How to Make It

  1. Preheat broiler.

  2. Heat olive oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms; sauté 4 minutes. Add onion and next 4 ingredients; sauté 8 minutes or until vegetables are crisp-tender.

  3. Add pizza sauce and pasta; cook 2 minutes, stirring constantly or until thoroughly heated and pasta is evenly coated with sauce. Remove from heat, and top with cheese.

  4. Wrap handle of pan with foil; broil 1 minute or until cheese melts.
