Quick Parmesan Spinach
We don't recommend using frozen spinach in this recipe. Even though fresh spinach might be more expensive, the flavor is beyond compare. Be sure to rinse and dry the leaves before cooking.

Ingredients
- 2 garlic cloves, pressed
- 2 teaspoons olive oil
- Vegetable cooking spray
- 3 (10-ounce) packages fresh spinach
- 1/4 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1 tablespoon fresh lemon juice
- 2 tablespoons freshly grated Parmesan cheese
Preparation
- Sauté garlic in hot oil in a large skillet coated with cooking spray over medium-high heat 1 minute. Add spinach, 1 handful at a time, and sauté just until spinach begins to wilt. Add salt, red pepper, and lemon juice, gently tossing to coat. Remove from heat, and sprinkle evenly with Parmesan cheese.
