We don't recommend using frozen spinach in this recipe. Even though fresh spinach might be more expensive, the flavor is beyond compare. Be sure to rinse and dry the leaves before cooking.
2 garlic cloves, pressed
2 teaspoons olive oil
Vegetable cooking spray
3 (10-ounce) packages fresh spinach
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1 tablespoon fresh lemon juice
2 tablespoons freshly grated Parmesan cheese
How to Make It
Sauté garlic in hot oil in a large skillet coated with cooking spray over medium-high heat 1 minute. Add spinach, 1 handful at a time, and sauté just until spinach begins to wilt. Add salt, red pepper, and lemon juice, gently tossing to coat. Remove from heat, and sprinkle evenly with Parmesan cheese.
