  • 1 package(s) Precooked Chicken Italian Sausage
  • 1 tablespoon(s) olive oil
  • 1/2 slice(s) onion
  • 1 slice(s) green pepper, small
  • 2 clove(s) sliced garlic
  • 2 dash(es) red wine vinegar
  • 1 can(s) diced tomatoes
  • 1 teaspoon(s) italian seasoning
  • 1/2 teaspoon(s) kosher salt
  • 1/4 teaspoon(s) pepper
  • 1 cup(s) chicken broth
  • 1/2 cup(s) water
  • 1 cup(s) fresh spinich
  • 1/8 cup(s) parmesan cheese
  • 1/8 cup(s) mozzarella cheese
  • 8 ounce(s) egg noodles


  1. Saute italian sausage in olive oil, until heated through (alternatively, you could use chicken breasts- if you do, cook until chicken is no longer pink). Add onion, green pepper and garlic, saute for about 5 minutes. Add red wine vinegar, diced tomatoes with juice, and the seasonings, cook for 2-3 more minutes. Add egg noodles, water and chicken broth, cover and cook according to noodle package directions. Uncover, top with spinach and let the spinach wilt. Mix well and sprinkle both types of cheese on top.
