Quick and Easy Lemon Curd

Easy and yummy!!!

When I got my Feb 2013 issue and saw this lemon curd recipe for the microwave I knew I just had to try it. It's as easy as the instructions say. It tastes soooo yummy. I also tried the Lemon Yogurt crumb cake and it was superb too!. I can't get enough of that lemon curd. It's my new favorite recipe. Next I'll be making the lemon cheescake bars. Colossal success on the very first attempt! I'm not exactly sure why, but I chose to cook it on the stovetop instead of the microwave & it was easy and absolutely perfect. This recipe is most definitely a keeper.

This was quick and easy but too sweet for my taste. I like a more tart lemon flavor and will try again, this time using maybe 1/2 cup less sugar. We'll see what happens.
