I made this recipe with a few changes based on ingredients I had on hand and found it to be quite tasty! I omitted the parsley, used golden raisins, used orange juice instead of lemon juice, omitted the garlic, cumin and paprika and opted for curry powder instead (maybe 1 tsp). It took about 5 minutes to make and made a nice side dish.

While this had an interesting flavor and was edible, I really just didn't care for it overall. My husband thought it was really good but the leftovers sat in our refrigerator and did not get eaten. I used a food processor blade to shred the carrots quickly so it wasn't time consuming at all. Since it wasn't a homerun in our house, I won't make it again.
